Spanish mackerel is called &quot;sawara&quot; in Japanese and they come in two waves at the beginning of winter and in Spring here in Suruga Bay in Shizuoka.
The winter Spanish mackerel is called &quot;kan-sawara&quot; (&quot;cold sawara&quot;), and makes for great sashimi!
Add some white wine to your recipe and your boyfriend will tell you it&#039;s French cooking!LOL
